Compote de pomme is one of my favorite treats. In France, we usually eat it for dessert (most important part of the meal!) for lunch or dinner. As you may not know, dessert is an institution in France! We always finish our meal with something sweet, not necessarily a piece of cake, but a yogurt or compote is good enough, even thoigh I never say no to a cookie!
I really love this recipe because it is a light and sweet treat and you can make it with all the fruits you want. I often include bananas or strawberries to change from apples. The recipe I will share with you here is the traditional recipe of compote, so this one is only made with apples. But it is still very good and easy to make!
The advantage of compote is that you can it for many different purposes! Of course you can eat it just the way it is, but you can also include it in your apple pies or in your cakes. If you do not like things that are too sweet, this is also perfect for you!
Here are the ingredients you need:
- 4 lbs (2kg) of apples (I took gala, but any kind of apples are good)
- 800ml of water
- 1 tspn of cinnamon
- 1 tspn of vanilla extract
- 2 tbsp of honey (you can replace it with sugar if you prefer)
- 2 tbsp of malibu (optional)
1- The first step is to peel and slice your apples in small cubes. As I mentionned above, I used gala apples for this recipe, but you can use any apples you have. Compote is actually a great way to use your old apples instead of throwing them away. once you sliced them all, put them in a large pot.
2- Add 800 ml of water in the pot, and add the spices: cinnamon, vanilla extract, and honey. You can add more spices according your taste. In the traditional recipe, we usually use sugar, but I avoid refined sugars so I decided to add honey instead. It does not change the taste of the compote. In case you don’t like honey, don,t be afraid you won’t taste it!
If you want to spice up the compote, you can also add some Malibu or rum. Alcohol evaporate with heat so you won’t taste it, it will only add more flavors to the compote.
3- Put the pot on medium heat, cover with the lid and let it cook for 30 min. Then, take off the lid, and keep cooking until there is not more water. Don’t forget to stir regularly so the compote does not stick to the pot.
4- Once there is no more water in the pot, you have two options. If you prefer having chunks of apples, slightly mashed the compote. If you prefer a smooth compote, mix until there are no more chunks. Put in the fridge for few hours. Once the compote is cold you can eat it.
As you can see, it is very easy! If you have children, compote make an amazing baby food (just don’t add the alcohol). Compote is a recycling recipe as you can simply use any apples you have, especially those old and soft apples.
